Ringside

Sir Thomas Burger is blowing are minds and leaving us more breathless then a 1/2 pounder:

Featuring the $2.25 happy hour gorgonzola cheeseburger from The RingSide on Northwest Burnside, served by our favorite bartender Jim.

At a place known for steaks, the RingSide's late night bar menu surprisingly includes many great options such as a Cesar salad with real anchovies, oyster shooters, the ever popular steak bites, and one fantastic burger.

Cheeseburger options include cheddar, swiss, or a saucy gorgonzola. It about 3/4 size of a typical premium burger and comes served with a pickle and the ketchup comes in its own mini gravy boat. Sit at the left side of the bar and you'll notice blueprints for building a burger hanging on the wall. Happy hour deals start at 9:45, but get there early because it fills up fast - weeknights are the best bet.

For $4.00 the "I can have a cheezeburger?" does the trick. Watch out though. That special sauce is probably healthy and good for you while tasting delicious.

It's been awhile since the fire (doesn't seem like it though does it?).

SweetHotMustard recently won some raffle prize giftcertificate for Dots from a fundraiser for RideOn (those folks that ride a mini-scooter to the bar you are at, then drive you home so your car is there in the morning for $5.00....soon hopefully). Well, there is burgers on the menu so they got took with the Hamburgler

Both of these were $6.50. That first one is a cheeseburger, then a bacon cheeseburger with a twist. Herb Creamcheese (SweetHotMustard swears by creamcheese as the best topping on a Hot Dog, and now a hamburger).

That monster mess of fries is Bacon and Cheese for $5.00. Add bbq, ranch, 1000 Island, Spicy Sour Cream, Spicy Tofu, or Bueu Cheese.

Burger Skills: Hamburger Slang

There is a lot of slang out there about hamburgers and from time to time we will update this list. If you come across any hamburger related slang let us know.

Following is a listing of hamburger and related slang (barring the obvious):

$100 Hamburger: Aviation slang for a private general aviation flight for the sole purpose of dining at a non-local airport. Most often used by pilots who are looking for any excuse to fly, a $100 hamburger trip usually involves flying a short distance (less than two hours), eating at an airport restaurant, and flying home. "$100" originally referred to the approximate cost of renting or operating a light general aviation aircraft, such as a Cessna 172, for the time it took to fly round-trip to a nearby airport. Increasing fuel prices have since caused an increase in hourly operating costs for most airplanes, whether rented or owned.

American Chop Suey: Macoroni with hamburger and a bit of tomato sauce.

Bap: soft, flattish bread roll; hamburger bun.

Burger: What they say on the Cosby show for a fine lookin' lady.

Burger: Bicycle crash.

Burn One: Put a hamburger on the grill.

Burn One, take it through the garden and pin a rose on it: Hamburger with lettuce, tomato, and onion.

California Style: Toppings of Lettuce, Tomato, Onion, and sauces.

Damper: Australian for "bun" (at least according to Tittsworth)

Fat Hamburger: Slang term meaning "American". Originates from Korea.

Hamburger(s): MDMA (Ecstacy)

Hamburger-a-gogo land: A slang word for America

Hamburger Eyes: On February 14th of 2001, Hamburger Eyes Photo Magazine was created. It was an attempt to answer questions about the dynamic relationship between males and females.   The term "hamburger eyes" was slang we used to describe the look you had when you found someone you liked, "Dude, you should go talk to that girl, she's giving you hamburger eyes."

Hamburger Helper: Crack

Hockey Puck: A Hamburger, well done

Itchy Ring: Cockney slang for Burger King: "I right fancy an Itchy Ring."

Rabble Rabble: An expression of being, often in connection with the theft of hamburger goodness.

Two Cows, make them cry: Two hamburgers with onions.

Here he spotlights a favorite burger of his from Poor Richchards Restaurant (home of the two-fer!):

They have a great bacon cheeseburger made from ground Top Sirloin and deliciously prepared to order (choose medium-rare). It comes with its own special relish/Thousand Island sauce along with fresh tomato, lettuce and red onions. They use thick salty bacon and cheddar cheese. The fries come heavily seasoned in something that tastes very close to Lawry's seasoning salt. All that and a couple of dill pickle spears. Eat in the bar and you'll be able to smoke, drink, gamble, and watch the 72 inch flat screen T.V.

Rogue Ales Public House

The Hamburgler gets back in the game and checks out one of them "brewpubs" that seemed to be such a trend back in the 90's.

The burgers here come in a bit more expensive (that bacon cheeseburger you see was $9.75). Does not come anywhere close to other burgers at that price or less (Slow Bar, Club 21, North 45, Amnesia), probably due to some overhead issue. sigh.

Should have skipped the regular burger and went straight for the "American Kobe Beef" burger. Those start at $11.95 for a 1/2 pounder, and up to $14.95 for bacon/cheese. This will probably need an update.

Kind of turned off by the whole place. It's not that the beer is bad, or that the burger is bad, it's when you are eating here you are bombarded with branding of the Rouge empire and the room feels like mail order catalog "bar theme".

The Hutch

AmericanCheese and CondimentSpreader continue their quest through Southeast Portland:

Having been to the original Hutch on Glisan quite a few times it was deemed necessary to peep their new venture on 41st and SE Holgate.

Formerly a restaurant named Grandma's,... the New Hutch is pretty laidback. Full old school digs upstairs, huge woodcarved bar downstairs. Head downstairs.

Large menu, some good burger selection. Really nice bartender. AmericanCheese went straight for the traditional Cheeseburger. They serve it and all their burgers with a house special sauce. No condiments required. Good large steak fries.

CondimentSpreader thought he was tough and opted for the "Hero Burger". Ham, two pieces of soft bacon, a fried egg, american cheese and a half pound of beef. The ham, which is usually thick in burgs of this type, was super thin and layered. Super good and almost overpowered the flavor of the beef. Only 2/3 the way through and it looked like breathing became difficult. Recommended, however.

Lotsa Luck Tavern

CondimentSpreader seems to be self-medicating with beef.

When you find yourself really hungover anywhere near Powell, please consider the Lotsa Luck Tavern...

20 oz Pabst and burgers that they put cheese on BOTH sides of the patty. I don't understand why no one else adopts this practice. Seriously genius. You really have to be in the right state of mind to step to this place. Opt for the mushrooms and swiss. Pretty inexpensive.

My cohort braved the addition of the over-medium egg and required nap shortly thereafter.

Caprial's

CondimentSpreader is working his way deeper into the Southeast.

We got a big-un' here....Pretty serious.

1/3lb of that Strawberry Mountain stuff we all enjoy. Grilled to order with crispy fried shoestring onions and a house-baked bun. Pleasant garlic aioli, and I opted for creamy bleu on top. Really nice. Little pricey at $9.50 with the cheese, but not an everyday burg. Served with relish made from Caprial's own pickles (one of which accompanies the meal).

I'd suggest ordering it a little less done than your preference, as mine was medium and not medium rare.

Interview: Karen Bernards

Introducing Karen Bernards and her "Sweet Hot Thai Burger".

This September our new local hero (McMinnville) Karen Bernards won the Sutter Home Build A Better Burger Contest and collected an oversized check for $50,000 (thats about 8300 hamburgers! ). She got to feed her champion burger to Al Roker on televisions Today show, flown around a bit, and I'm sure got her fair share of free Sutter Home wine.

The burger used many Thai influences, crushed Kettle chips, and some delicious sweet & spicy thai sauce in the mince.

You can watch her on the Today Show here: LINK

We have now dubbed her with the honary Portland Hamburger alias the BurgerQueen. Who else would be more deserving?

Here follows some of our interview slowballs and her winning recipe:

Do you normally enter food contests? I heard there are folks out there making a living doing it.

The extent of my cooking contest experience is the Oregon State Fair. I like to enter their daily contest. I have met a lot of great people there. Build-A-Better Burger is my first national contest. I would love to enter more. It was a lot of fun.

How did you come up with the winning burger?
At the time that I created the burger we were eating a
lot of Thai food and there is a sweet thai sauce that I really like. So I decided to create a burger using the sweet thai sauce. I was trying to come up with something that tasted good, but was a little different. Not your moms hamburger. The sauce, salad, and the burger are a good combination.

Do you have any other burgers that you considered for the contest...or are you saving them for next year?
I came up with four recipes for the contest. I can not enter the beef burger part [ next year ], but I hope I can still enter alternative burger ( turkey, chicken, pork, elk, etc.) I will have to wait to read the rules next year.

Was it scary making your burgers on the Today show for Al Roker?
The Today Show was a lot of fun. Everyone that has asked me about it has said I really bossed Al around and told him what to do. They were surprised he did what I told him to do. I just did what I have seen other people do when they are on TV.

I was very nervous, I did not even look at the camera or the crowd. I just pretended they were not there. I just wanted to get through it. I did have two people ask for my autograph, and a few more wanted to talk about how to cook their burgers. That was fun.

Have you gotten any weird solicitations or offers from anyone since you won (well beside a website in Portland that posts pictures of hamburgers)?
Nothing too weird. I did a radio spot in Kansas last weekend over the phone. That was fun.

My family and I went on a tour of Kettle Chips. That was great! I believe I will be doing some promotional things for Sutter Home later. I have been asked to make burgers for a lot of people. Last week I had to make burgers for my sisters work at 9am. Who wants burgers at 9am? That was the deal she made with her boss so she could go to NY with me. I will be doing some fundraisers in the Spring.

Sweet-Hot Thai Burgers Recipe

Ingredients

Cilantro Mayonnaise

- 1 cup mayonnaise
- 1 tablespoon lime juice
- 1/4 cup chopped cilantro

Thai Salad

- 1/4 cup fresh lime juice
- 2 cloves garlic, chopped
- 1 tablespoon Colavita Extra Virgin Olive Oil
- 3/4 teaspoon kosher salt
- 2 teaspoons bottled Thai sweet chili sauce
- 1 tablespoon peeled and grated fresh ginger
- 1/2 cup chopped fresh cilantro
- 1/4 cup chopped fresh basil
- 1 English cucumber, cut into matchsticks
- 1 red bell pepper, cut into matchsticks
- 1 1/2 cups fresh bean sprouts

Patties

- 2 pounds freashly ground chuck
- 2 teaspoons kosher salt
- 3/4 cup bottled Thai sweet chili sauce
- 4 green onions, sliced
- 1 cup Spicy Thai Kettle Chips, placed in a bag and smashed slightly
- 2 to 3 tablespoons vegetable oil, for grill rack
- 6 hamburger buns

Directions

Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high. To make the mayonnaise, whisk the mayonnaise, lime juice, and cilantro in a small bowl. Cover with plastic wrap and set aside.

To make the salad, whisk the lime juice, garlic, olive oil, salt, sweet chili sauce, ginger, cilantro, and basil in a small bowl. Combine the cucumber, red pepper, and bean sprouts in a large bowl. Toss with the dressing to coat. Cover with plastic wrap and set aside.

To make the patties, combine the chuck, salt, sweet chili sauce, green onions, and chip pieces in a large bowl, handling as little as possible. Shape into 6 patties to fit the buns. Loosely cover with plastic wrap and set aside.

When the grill is ready, brush the grill rack with vegetable oil. Place the patties on the rack, cover, and cook, turning once until done to preference, 5 to 7 minutes on each side for medium. Place the buns, cut side down, on the outer edges of the grill rack to toast lightly during the last 2 minutes of grilling.

To assemble the burgers, spread a generous amount of the cilantro mayonnaise over the cut sides of the buns. On each bun bottom, place a grilled patty, followed by equal portions of the Thai salad, add the top bun and serve.

Makes 6 burgers

Mean Gene's Burgers

You know its not that we would try and pull that marketing gimmick of repackaging pop culture bits from your youth and pawning them for consumption. Sorry about that. Not even sure if these are around anymore.

Seems like Gene learned that having a business partner can be a messy affair. Wikipedia sums it up:

His name has been associated with fast food chain, Mean Gene’s Burgers, and a chain of pizzerias located within bowling alleys, Mean Gene's Pizza. These are owned by Hot Stuff Foods, which was headed by two of his nephews. Early in 2006, Okerlund and Hot Stuff split. Okerlund and one of the nephews were planning to start their own food company on the brands, but Hot Stuff sued, claiming they had "Mean Gene" trademarked. Okerlund lost, with the judge saying that Okerlund can't use the name "Mean Gene" for his new food company. Okerlund succeeded in cancelling the trademark registrations held by Orion, but remains enjoined from competing with Orion.

Mean Gene always had a quality interviewing style by prompting questions and listening well. I mean check out how he led the Macho Man right up keyhit mountain. Pacing is always a good look.

That "other food" you see there went down the hatch with Champaign and a beer (breakfast of champions). Cordon Bleu sandwich had grilled chicken, smoked ham, and gruyere for $7.25. Hamburgler went with the "Brunch Omelette" that included ham, sharp cheddar, scallions, and potatoes for $7.75.
